White Bean & Tuna Salad

Preparation Time: 3 minutes
Cooking Time: 1-2 minutes (if served warm)
Tips:
  • The ultimate can't be bothered to cook at the end of the day meal
  • Can have warm. Place in a saucepan and gently heat until tuna & white beans are warm
  • Do not overheat nor boil the ingredients
Ingredients:
  • 200g white beans
  • 150g tuna in spring water
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • ½ red onion, finely sliced
  • 1 tablespoon finely chopped parsley
  • Handful of baby spinach

Method

Mix together all the ingredients in a bowl and serve with chunks of crusty bread.
