 Mango, Yoghurt & Maple Tarts

- 1 sheet puff pastry
- 200g Greek-style yoghurt
- 2 tsp maple syrup
- 2 mangoes
- Maple syrup to serve

Method
Using a small saucer (about 11cm diameter) as your template, cut 4 rounds from the puff pastry sheet. Place on a baking tray lined with baking paper. Prick each pastry round a few times with the tip of a knife and put in the oven on the top shelf. Bake for 7-8 minutes until golden brown. You may need to turn the baking tray around around the 4 minute mark to ensure even cooking. While this is cooking, mix together the yoghurt & maple syrup and slice mangoes thinly. Once the pastry is cooked, make a stack by putting one round of pastry onto a plate, cover with a quarter of the yoghurt & mango. Put another pastry disc on top and again cover with yoghurt and mango and so on. Drizzle over maple syrup and serve immediately.
