Lamb with Garlic & Rosemary Rub

  • You can also cook this on the barbecue
Ingredients:
  • 5 cloves of garlic
  • 4 sprigs of rosemary, roughly chopped
  • 3 tablespoons olive oil
  • 8 lamb cutlets

Method

Sprinkle some salt over the garlic, then mash with the back of a fork until crushed. Season with pepper & mix in the rosemary and half of the olive oil.

Rub the garlic mixture into lamb flesh and leave to marinate for 5-10 minutes.

Heat a frying pan over medium heat and sear the pieces of lamb on both sides for 2-3 minutes each. Turn once during cooking. Put the lamb aside to rest for 3 minutes.
