Fish Parcels with Dill & Mint

| Ingredients: |
- 8 slices of lemon
- 300g snowpeas
- 3 carrots, julienned (ie cut into strips)
- 2 zucchini, julienned (ie cut into strips)
- 2 tablespoons dill, finely chopped
- 2 tablespoons mint, finely chopped
- 4 flathead fillets, cut in half

MethodTake 2 large sheets of baking paper. Place 2 slices of lemon in the middle of the baking sheets and then layer the snowpeas, carrots & zucchini on top. Sprinkle half the dill and mint over the layers. Put the flathead on top and drizzle with a small amount of olive oil. Sprinkle with the remainder of the herbs. Fold up the parcels, rolling the edges together, to form a tight seal. Place on a baking sheet and cook in the oven for 8 minutes. Remove the parcels and serve immediately.
