Chicken & Snow Peas with Thai Dressing

- Alter the amount of red curry paste according to how hot (or not!) you like it
- Vegetarians can substitute the chicken for slices of tofu

| Ingredients: |
- 2 tablespoons red thai curry paste
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 300g chicken tenderloins
- 150g snow peas
- 1 cup coriander, finely chopped
- 1 cup mint leaves, finely chopped
- 2 handfuls of baby spinach leaves, washed

MethodA simple and quick meal in it's own right. Combine lime juice & red curry paste and set aside. Heat a tablespoon of olive oil in a wok, add the chicken and stir fry for 3 minutes. Add snow peas and continue to stirfry for a further 3-4 minutes, until chicken is cooked through. Once cooked, place chicken in a bowl. Add the mint, coriander and spinach leaves. Pour over the curry paste dressing and toss to combine. Serve immediately.
