Chicken & Snow Peas with Thai Dressing

Serves: 2
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Tips:
  • Alter the amount of red curry paste according to how hot (or not!) you like it
  • Vegetarians can substitute the chicken for slices of tofu
Ingredients:
  • 2 tablespoons red thai curry paste
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 300g chicken tenderloins
  • 150g snow peas
  • 1 cup coriander, finely chopped
  • 1 cup mint leaves, finely chopped
  • 2 handfuls of baby spinach leaves, washed

Method

A simple and quick meal in it's own right.

Combine lime juice & red curry paste and set aside.

Heat a tablespoon of olive oil in a wok, add the chicken and stir fry for 3 minutes. Add snow peas and continue to stirfry for a further 3-4 minutes, until chicken is cooked through.

Once cooked, place chicken in a bowl. Add the mint, coriander and spinach leaves. Pour over the curry paste dressing and toss to combine.

Serve immediately.
