Baked Salmon with Olives, Snow Peas & Tomatoes

- 150g snowpeas, ends trimmed
- 10 cherry tomatoes
- 1 tablespoon of olives
- Handful of fresh parsley
- 2 tablespoons pine nuts
- 1 tablespoon olive oil
- 2 salmon fillets
- Lemon quarters

MethodPrepare the fish: Toss the snowpeas, cherry tomatoes, olives, parsley & pine nuts in the olive oil and season with salt and pepper. Put half the snowpea & tomato mixture into a baking dish. Place the salmon fillets on top and then cover with the rest of the snowpea & tomato mix. Cooking the fish: Cover the fish with foil and roast in the oven for 8-10 minutes. Serve with lemon quarters to squeeze over the dish, and a big plate of salad.
