Baked Salmon with Olives, Snow Peas & Tomatoes

Serves: 2
Preparation Time: 5 minutes
Cooking Time: 8-10 minutes
Tips:
  • Preheat oven to 200°C
Ingredients:
  • 150g snowpeas, ends trimmed
  • 10 cherry tomatoes
  • 1 tablespoon of olives
  • Handful of fresh parsley
  • 2 tablespoons pine nuts
  • 1 tablespoon olive oil
  • 2 salmon fillets
  • Lemon quarters

Method

Prepare the fish: Toss the snowpeas, cherry tomatoes, olives, parsley & pine nuts in the olive oil and season with salt and pepper. Put half the snowpea & tomato mixture into a baking dish. Place the salmon fillets on top and then cover with the rest of the snowpea & tomato mix.

Cooking the fish: Cover the fish with foil and roast in the oven for 8-10 minutes. Serve with lemon quarters to squeeze over the dish, and a big plate of salad.
