- 1 punnet of raspberries
- 2 teaspoons of icing sugar, sifted
- ½ cup natural yoghurt
- ½ cup ricotta
- 3 ripe peaches, stoned & cut into thick slices

MethodMix the raspberries with icing sugar. Using a fork, crush the two together, to create a bright red juice. Beat together the yoghurt and ricotta to a smooth mixture. Layer the raspberry sauce and yoghurt ricotta mix in a glass and top with peaches.
