Lima Beans with Roasted Tomato & Spinach

Tips:
  • Pre-heat oven to 180C
  • One for the garlic lovers - feel free to add more or less depending on taste
Ingredients:
  • 1/2 punnet cherry tomatoes
  • 1 clove of garlic
  • 200g lima beans
  • 1 tablespoon olive oil
  • 1/2 tablespoon lemon juice
  • 1 handful baby spinach

Method

Place cherry tomatoes on a baking tray, drizzle with half the olive oil and roast in the oven for 5 minutes.

Meanwhile sprinkle the garlic with a little salt and crush using the back of a fork.  Whisk together olive oil, lemon juice and add the crushed garlic.  Put dressing to one side.

Put lima beans and spinach in a bowl, add roasted cherry tomatoes and dressing, toss to combine.
