Lima Beans with Roasted Tomato & Spinach

- Pre-heat oven to 180C
- One for the garlic lovers - feel free to add more or less depending on taste

| Ingredients: |
- 1/2 punnet cherry tomatoes
- 1 clove of garlic
- 200g lima beans
- 1 tablespoon olive oil
- 1/2 tablespoon lemon juice
- 1 handful baby spinach

MethodPlace cherry tomatoes on a baking tray, drizzle with half the olive oil and roast in the oven for 5 minutes. Meanwhile sprinkle the garlic with a little salt and crush using the back of a fork. Whisk together olive oil, lemon juice and add the crushed garlic. Put dressing to one side. Put lima beans and spinach in a bowl, add roasted cherry tomatoes and dressing, toss to combine.
